It should be possible to configure the Sort Order of picklist values in Service Board or it should automatically retrieve the Sort order from the Salesforce Environment if possible.
We have various picklist values on the Appointment "Status" picklist field like.

and the above demonstrated order of the picklist values are the most intuitive order in which they are sorted in Salesforce.
